Try this easy-to-make gluten free dessert recipe next time you're stuck for a sweet treat for the family:
GLUTEN FREE NO-BAKE CHOCOLATE BALLS
- ½ cup butter
- ¼ cup milk
- 4 cups mini marshmallows
- 2 cups Enjoy Life chocolate chips
- 4 cups shredded coconut
Using a large sauce pan, combine butter and milk over low heat until butter is melted. Add marshmallows and stir until they are completely melted, then pour the chocolate chips into the mix and stir constantly. Once the chocolate is completely melted and the mixture is smooth, remove it from heat and allow it to cool; the mixture will thicken as it cools. Wet hands with water or a very thin layer of vegetable oil; using a small scoop or spoon, scoop out a small amount of the mixture and roll into balls, about 1" in diameter. Roll the balls in shredded coconut and place them on a wax paper lined cookie sheet. Refrigerate the chocolate balls until they're firm. NOTE: If you enjoy the taste and texture of toasted coconut, incorporate the toasted variety into this gluten free dessert recipe. To do this, simply sprinkle the coconut in a dry pan over medium heat and stir continuously until the coconut is lightly browned. Cool the coconut and roll the balls in it.
